The 180-day recipe includes added sugar, while the listed 380-day and reduced-salt recipes do not list sugar as an ingredient. All three contain soy and wheat. Compare the complete ingredient list for your selected product; brewing duration alone does not describe every difference between recipes.

A clean-label recipe does not automatically mean reduced salt. When comparing products, check the sodium value, serving size and the reference product used for any reduction claim. The 180-day, 380-day and reduced-salt recipes described above contain wheat and should not be selected as gluten-free products. Clean label and gluten-free are separate requirements.

No. The selected soy sauce recipes above specify non-GMO soybeans. This describes the soybean ingredient; it does not mean that every product is certified organic or that the finished product carries a particular third-party non-GMO certification.

Selected options include rice vinegars and reduced-salt oyster sauce. For example, our glutinous rice white vinegar lists water, glutinous rice, rice and sugar.
