The Caramel color is a natural-looking food coloring that is usually made by heating sugar under controlled conditions. It is this colorant caramel that gives rich brown shade, amber tone, or a golden hue to different beverages like cola, beer, and tea. While the regular caramel is sweet, the caramel color doesn’t have a sweet taste as its purpose is to enhance the appearance of foods and beverages only. Types of Caramel Color
The performance of the caramel color depends on number of factors such as pH, charge, and color intensity. For example Cola, which is a Low-pH beverage, requires negatively charged caramel colors to ensure that there is no sedimentation. Similarly, positive or negative charges of a caramel color also impact the way it interacts with tannins and other components within a beverage. Caramel can be classified into four main types. This classification is based on certain factors such as the manufacturing process, pH tolerance, and charge. Moreover, High EBC values in a colorant caramel product (like of our DS-004), result in darker and richer tones. This makes them more suitable for use in relatively darker beverages.
Plain Caramel is created by using heat-treated sugars without any extra additives. It has a slight negative charge, making it ideal for mild coloring applications such as juices.
Caustic Sulfite Caramel carries a negative charge. It has a subtle coloring effect and is mainly suitable for carbonated beverages and teas.
This caramel has a positive charge, making it ideal for acidic products, and is widely used in vinegar, yellow wine, and flavored syrups.
The Sulfite Ammonia Caramel is a high-strength and negatively charged caramel color. It delivers the darkest shades which makes it ideal for darker liquids like soy sauce, cooking wine, and coffee.
